Thanks for the tips! I didn't think about toasting it, so that'll be for the next serving. I was totally unfamiliar with quinoa until I had it in a vegetarian restaurant. They had a stuffed acorn squash with quinoa and roasted veggies on the menu and it was so yummy!
Delicious and good for me... now, if that's not the way to go, I don't know what is? :)

A few things to know about Quinoa - one of my favorite grains!.
#1: Quinoa. like other plants, contains a naturally-occuring component called saponins, a natural insect deterent inherent in the grain, so (unless the package says otherwise) it needs to be throughly rinsed before cooking or it will taste a bit soapy.
#2: Toasting it really helps bring out its flavor. You can do this in the oven or a dry pan.
#3: If you add hot liquid to it (broth or water), pilaf style, it will cook up in about 15 minutes.

Another nice recipe is the Pistachio Chicken:

Turn oven to 425

1 pound of chicken tender strips
1/4 cup almond flour
1 tsp salt
2 eggs
1/4 cup dijon mustard
1/2 cup or more of chopped pistachios

Blend eggs with dijon mustard in a bowl.
Blend almond flour
and salt in a seperate bowl.
Dredge chicken in the flour, then the egg misture and then roll in the pistachios.

Place on cookie sheet and bake for 10-15 minutes! Good stuff!

Hi!Thanks for your reply. Yes you can use quinoa, it is high in a variety of nutrients. Yo may want to look up spme recipes as it is pretty bland until you add some flavor. You could add almonds or walnuts as a nice start.

Thanks for the links, I became an instant fan of Elena's Pantry!
I have a question. At breakfastime, I've been trying to eat either eggs or a protein shake to up my protein intake and lower carbs. I heard that quinoa is fairly high in protein, and was wondering if it qualifies as a high protein/low carb option for breakfast.
